Highberry Sauvignon Blanc 2021

This Highberry Sauvignon Blanc fermented and aged in old 500 liters barrels, resulting in lots of texture and depth in the glass. After fermentation, using natural yeasts, the wine was allowed to mature for seven months on the lees. A small amount of Semillon was added to enhance the flavour. Opening a bottle reveals gooseberry, passionfruit, and granny smith apples mingling up top, leading into a broad, full palate.
