The Kilchoman 100% Islay, Single Farm Single Malt stands out from the crowd for a few reasons. For one, it is the only whisky in Scotland to be produced entirely on one farm, from barley to bottle. Secondly, it’s distilled from Optic and Publican barley varieties grown at Kilchoman in 2007, 2009 and 2010. It is also aged in a combination of 39 bourbon barrels and 2 oloroso sherry butts for a minimum of 9 years. The result is a nose of citrus sweetness leading to a flavourful palate of prunes, cinnamon and cooked apples and pears. A mildly spiced peat smoke, lasting sweetness and rich sherry notes reveal themselves at the finish.
Tasting Notes
Nose
Elegant, sweet peat smoke, followed by waves of citrus and honey, finishing with notes of vanilla and salted caramel.
Taste
Bourbon-driven 100% Islay brings an initial malt-driven profile followed by green fruits; apple and pear. Light spice, raisin and toffee are present towards the finish.
Finish
Peat smoke returns and remains on the palate. The oily texture of this 100% Islay allows for a creamy profile balanced with toffee and caramelised sugar.
