What makes the Cap Classique so special is that it is a work of patience and precision, which favours the secondary characteristics from bottle fermenting and aging. Six years in the making, the house’s traditional winemaking approach is crucial in achieving the key flavours of brioche, richness, as well as the delicate texture, noted on the after taste. The 2014 vintage has mineral backbone and classic brioche yeasty notes, but is still surprisingly fruity for being aged on the lees for 6 years.
